Pork Scallopini

1 1/2 pounds pork butt, thinly sliced
about 1/2 cup all-purpose flour
about 1 tblsp each butter or margarine and salad oil
1/2 cup chopped green onion
1 clove garlic, minced or mashed
1 tsp salt
1/2 tsp oregano leaves
1/3 tsp pepper
1/2 cup sherry
1/4 cup water
1/3 pound mushrooms, sliced
Pound meat slices thin as possible
Lightly dredge in flour, shaking off excess.


How to make pork scallopini:
  • Heat 1 tblsp each of the butter and salad oil in a frying pan over medium-high heat.
  • Add meat slices, a few at a time, and brown quickly on both sides.
  • Remove from pan as browned.
  • Add more butter and salad oil to pan, if needed, to brown remaining meat slices.
  • Stir in the onion, garlic, salt, oregano, and pepper.
  • Return meat to pan and pour in the Sherry and water.
  • Reduce heat, cover, and simmer 30 minutes, adding water if needed.
  • Add mushrooms to pan, cover and simmer 15 minutes longer or until meat is tender.
