Chicken In Sweet Cream

Chicken in sweet cream recipe is also a great idea as a Valentine Day recipe.



4 to 5 pounds chicken parts (breasts and thighs)
salt and pepper
2 tblsp butter or margarine
1/2 cup regular-strength chicken broth
1/4 cup dry red wine or apple juice
2 tblsp cornstarch
1 cup whipping cream
1/3 cup brandy (optional)


How to make chicken in sweet cream:
  • Rinse chicken pieces and pat dry’ season with salt and pepper.
  • In a frying pan, melt butter over medium heat ; brown chicken pieces, a few at a time, on both sides.
  • Set breasts aside.
  • Arrange thighs in pan, add chicken broth and wine, cover, and simmer 15 minutes longer or until juices run clear (cut a gash to test).
  • Arrange chicken in a serving dish ; keep warm.
  • Combine cornstarch and cream; and thickened.
  • Pour over chicken.
  • For flaming, heat measured brandy quickly to bubbling, ignite, and pour slowly over chicken; spoon sauce over chicken until flames die.
