MESSY CRAB RECIPE
Ingredients:
2 large onions, chopped
4 cloves garlic, minced or mashed
1/2 cup (1/4 lb.) butter or margarine
2 tblsp all-purpose flour
3 cups milk
1 cup whipping cream
2 to 3 large cooked Dungeness crabs (about 2 lbs. Each), cleaned and well cracked
Salt and pepper to taste
1 cup chopped parsley
lemon wedges
crusty French bread
How to make
messy crab:
- In a Dutch oven, cook the onion and garlic in the butter until onion is soft.
- Add the flour and cook, stirring, until flour is golden.
- Remove pan from heat and gradually stir in the milk and cream.
- Return pan to heat and bring to simmering, stirring.
- Add the crab, cover, and simmer about 10 minutes or until crab is heated through.
- Season to taste with salt and pepper.
- Stir in the parsley.
- Ladle crab and broth into shallow bowls ; pass lemons; dunk bread in the broth.
