CARBONARA RECIPE
Ingredients:
1 1/2 to 1 3/4 pounds boneless pork butt (or join end cut in 1/2 inch cubes, including fat)
1/2 tsp salt
1/2 tsp fennel seed (optional)
4 tblsp butter or margarine
12 ounces spaghetti
Boiling water
5 eggs, well beaten
2 cups freshly grated Parmesan cheese
1 cup finely chopped parsley
Pepper and salt
How to make
carbonara:
- Mix pork with the 1/2 tsp salt and fennel seed.
- Cook in a wide frying pan over medium heat, stirring occasionally, until juices have evaporated and meat is well browned (about 20 minutes.)
- Add butter in the pan heat until melted, keep hot.
- While the meat cooks, add the spaghetti to boiling water and cook until tender, following package directions.
- Have ready the beaten eggs, Parmesan cheese, parsley, pepper and salt.
- Drain spaghetti and add at once to the hot meat sauce.
- Mix well.
- Pour in the eggs and blend, lifting and stirring the paste.
- Sprinkle with half the cheese and the parsley and mix well again.
- Sprinkle with remaining cheese and a little pepper.
