BUTTERSOTCH CAKE WITH PEACHES RECIPE
Ingredients:
2 eggs
1 cup each sugar and all-purpose flour, unsifted
1 tsp baking powder
1/4 tsp salt
1/2 cup milk
1 tblsp butter
1/2 tblsp vanilla
butterscotch topping (recipe follows) sweetened sliced peaches
How to make buttersotch cake with peaches:
- In the bowl of an electric mixer, beat eggs until light.
- Add sugar, 1 to 2 tblsp at a time, beating well after
each addition.
- Combine flour, baking powder, and salt; sift into egg
mixture and fold carefully until blended.
- Heat milk with butter until melted.
- Add to flour mixture with vanilla, fold until well
blended.
- Turn into a greased and floured 8 inch square baking pan.
- Bake in a 350( oven for 35 minutes or until the top
springs spread with topping, and broil about 4 inches from
heat until bubbly, watching carefully.
- Cook, cut into squares and serve with sliced peaches.
- Butterscotch Topping : Blend 2 tblsp soft butter with 4
tblsp firmly packed brown sugar, 3 tblsp milk, and 1/2 cup
chopped pecans of fiberts.
